What’s Happening at the Affinage

Summer 2019

The affinage room has been up and running since May and the cheeses are happily developing their signature flavor profile. We are aging T2SS cheese makes from February and May 2019 at Pascal Affinage. Our October 2018 make has bloomed beautifully! It is a bit more creamy than our very first release and has that long umami finish. You can find T2SS at Providore Fine Foods in NE Portland and Barbur World Foods in SW Portland. We are so sorry to see that our 3rd retailer,  City Market NW, closed in August (so sad to see a landmark specialty market close after so many years). Exciting Plans!

Now that we are aging our cheese here in Oregon, the next step is to make the cheese here. We are getting close to that dream. Check back here at our Happenings page for updates! We are deeply thankful to Chris Roelli at Roelli Cheese Haus in Shullsburg, WI for his support and mentorship as he welcomed us into his creamery to make T2SS. We are fortunate to have such a close relationship with a highly distinguished artisan cheesemaker.
